demo.openedit.org doesn't upgrade automatically daily - so it'll be a few versions older. 5.1129 of editor is running there now. We always recommend the newest version, however, you can grab it from the CVS build server if you like.
Marnus, the look and feel of OE is very easy to change. Login to the sandbox, go to the "content" drop down, then pick "change layout" to change the look and feel of the entire site.
